Norman Hardie John Bill Cuvee 2021 - Canada

John Bill was Canada’s seafood authority and king of East Coast Oysters, and was involved in the success of countless restaurants. This corker of a wine was crafted and named in honour of Norm’s late friend John. Enjoy this delicious white blend with a tray of oysters and seafood, just the way John would have. Many say that blind this tastes just like a top quality Chablis. 

The wine is fermented and aged in old 500L French oak barrels for 12 months, and aged a further 14 months on the fine lees in horizontal tanks, optimizing the large surface area of lees to wine - adding wonderful complexity to the wine.
