HISTORY & TRADITION

 

Ca’ di Rajo is a winery immersed in the valley and surrounded by vineyards, strictly suitable for the production of both still and sparkling wines. The winery, built in modern style but respectful of the traditional architecture of the Piave area, is equipped with modern facilities for winemaking. Mixing the history and the tradition of the territory with innovation, careful and wise hands transform the fruits of this land into high quality wines.

Very intense, persistent and wide. The herbal aroma evolves – especially if aged more than a year- into perfumes which remind of oriental spices and cinnamon. 

Taste
Elegant, harmonious and complex both to the nose and to the palate. Its natural warm combines to the tannin softness and to the aroma persistency. Typical slightly vegetal final sensation.

Intense, wide, complex, with floral notes (eglantine and orange blossom) and a sensation of tropical fruit, citrus and apricot. 

Taste
The taste is fresh, fine, aromatic, Persistent, of good body and slightly mineral with excellent acid balance. Very good aftertaste with strong citrus notes; persistent and mellow ending. 


SAUVIGNON

Aromatic, complex, delicate, with clear notes of grapefruit, rose, pineapple, yellow pepper, tomato leaves and woods.  

Taste
Intense, voluminous, good fat structure, balanced with good acidity. Complex and intense varietal notes; the aftertaste is long and persistent.

Second fermentation in  steel tank for 120 days to 12,5° C.

Vinification
With maceration of 20-25 days in wooden vats of 35 hl. The temperatures can vary from 24 to 26 degrees to facilitate the extraction of the grapes skin pigment.  

Ageing
90% ages for 24 months in barrels of 12 HL. 10% ages for 12 months in barrique of 2,25 HL.  

Colour
Intense ruby red. 

Bouquet
It reminds of cherries, morel, dewberry, black cherry and plum with hints of cinnamon, vanilla, tobacco, violet and pepper. 

Taste
Luxurious, with a considerable structure and heavy tannins. Its flavour, together with a pleasant acidity and a good alcohol content, gives a long and delicious aftertaste. 


Raboso piave

Vinification
With maceration of 20-25 days in wooden vats of 35 hl. The temperatures can vary from 24 to 26 degrees to facilitate the extraction of the grapes skin pigment.  

Ageing
70% ages for 36 months in barrels of 12 HL; 30% ages for 24 months in barrique of 2,25 HL. 

Colour
Intense ruby red. 

Bouquet
It reminds of cherries, morel, dewberry, black cherry and plum with hints of cinnamon, vanilla, tobacco, violet and pepper. 

Taste
Luxurious, with a considerable structure and heavy tannins. Its flavour, together with a pleasant acidity and a good alcohol content, gives a long and delicious aftertaste. 


ROSSO IGT

Grape
Raboso Piave 20%,Merlot 50 %, Cabernet Sauvignon 30%   

Vinification
With maceration of 20-25 days in wooden vats of 35 hl. The temperatures can vary from 24 to 26 degrees to facilitate the extraction of the grapes skin pigment. 

Ageing
Merlot and Cabernet Sauvignon age for 14 months in barrels of 12 HL while Raboso Piave ages for 12 monthes in barrique.   

Colour
Intense ruby red. 

Bouquet
It reminds of cherries, morel, dewberry, black cherry and plum with hints of cinnamon, vanilla, tobacco, violet and pepper.  

Taste
Luxurious, with a considerable structure and heavy tannins. Its flavour, together with a pleasant acidity and a good alcohol content, gives a long and delicious aftertaste.

Vinification
Cold maceration for 10 hours.  

Ageing
8 months in stainless steel vats/tanks on the fine lees.  

ColourBright straw yellow. 

Bouquet
Elegant and complex with hints of pineapple, apricot, exotic fruit, peach blossom, wisteria and aromatic notes. 

Taste Luxurious, with a remarkable structure due to Grapes raisined on the vine; the flavour is full thanks to the high alcohol content; good acid balance, with a sweet, long aftertaste, with scents of exotic fruit.
